2021 Single Vineyard Big Bully Cabernet Sauvignon

A very memorable vintage for all the right reasons with wonderful ripening conditions that produced grapes with intense colour, flavour and tannin. Cool nights retained natural acidity and the warm days provided ideal ripening.
Vineyard
Our Cabernet Sauvignon is grown on well-drained fertile red clays over limestone located in the region of Wrattonbully, S.A. The crop yields are relatively low, producing great concentration of fruit flavour.
Winemaking
Fruit was Hand Picked and crushed to a single fermenter. Cold soaked for 36 hours, then fermented between 28-32C for 6 days followed by 21 days on skins post fermentation. Pressed directly to a combination of new and used french oak barriques (34% New) for a 14 month maturation. No Finings. No Filtration.
Tasting Notes
Deep ruby-purple hue with intense blackcurrent and varietal herbal aromas. On the palate, concentrated blackberry jam and cassis carries through the highly structured resolved tannin framework leading to the linear crisp acidity. Drinking well now or will further develop with medium to long-term cellaring.

"Hand-picked fruit, cold-soaked then warm fermented to a peak of 32˚C; left on skins for 21 days maceration extraction. Pressed direct to French barriques (47% new) for 12 months' maturation. Blended (with 3% malbec) and bottled without fining or filtration. Excellent colour through to the rim. You can't expect much more than the limitless cassis, a sprig of bay leaf, and firm tannins guaranteeing decades of life."
